REAL STEAK, TRANSFORMED.
WHAT IS BILTONG?
Biltong is a Southern African air-dried meat snack made from whole cuts of beef. The meat is seasoned with vinegar, salt and spices, then slowly air-dried rather than cooked.
The result is tender, savoury steak with concentrated flavour and naturally occurring protein.

A HERITAGE OF FLAVOR AND FUNCTION
THE ORIGINS OF BILTONG
Long before refrigeration, people preserved valuable protein with vinegar, salt and spices, then slowly air-dried or smoked the meat.
European settlers brought curing traditions to the Cape, building on meat-preservation practices already used in Southern Africa. Over time, these methods evolved into the biltong enjoyed today.

MADE FOR THE JOURNEY
FROM NECESSITY TO TRADITION
Dutch European settlers brought curing traditions to the Cape from the seventeenth century. During the Great Trek of the 1830s, Voortrekkers travelling inland needed food that could remain edible without refrigeration. Local conditions and available meats helped shape the air-dried product now known as biltong.
The name comes from Afrikaans: “bil” refers to the rump or hindquarter, while “tong” means strip or tongue. What began as a practical way to preserve meat eventually became a treasured part of South African culture.
BIL TONG BILTONG
More Than a Snack
Part of South African Culture
Across South Africa, biltong is enjoyed at sports matches, family gatherings, on long road trips and in lunchboxes. It is a familiar comfort food, a convenient snack and something made to be shared.
Everyone has their preference: thin or thick, lean or fatty, mild or spicy. Butcheries and biltong shops often sell it by weight and slice it fresh to order, while family recipes and spice blends are passed from one generation to the next.

FROM TRADITION TO PERFORMANCE
CLEAN PROTEIN FOR MODERN LIFE
Biltong has found a new audience among athletes, active people and anyone looking for a more natural alternative to heavily processed snacks. Its combination of real beef, concentrated protein and portability makes it well suited to modern life.
Made from whole cuts of beef, biltong provides complete protein containing all nine essential amino acids. It is naturally low in carbohydrates, easy to carry and satisfying; whether you are recovering after training, working through a busy day or heading outdoors.
The Evolution of a Classic
Rooted in Tradition. Made for Today.
What began as a practical way to preserve meat has travelled far beyond South Africa. Today, biltong fits naturally into gyms, offices, road trips and weekend adventures. It's still valued for the qualities that made it useful in the first place: real beef, concentrated nutrition and convenience.
At PRYMAL, we carry that tradition forward in Latvia using locally sourced beef, familiar spices and a slow air-drying process. The result is a modern steak snack with its roots firmly intact.
